End of the Road Recipes: Birch Lake Bruschetta Brats - The Ely Echo


The Fourth of July is almost here and if you are planning on hosting a get-together, Zup’s has you covered!

If you didn’t know, the Babbitt and Ely locations both have items that are unique to their store only, so if you usually only shop at one, I would recommend checking out the other from time to time.

Recently, I was chatting with one of the Babbitt Zup’s butchers about their wide selection of bratwursts and he mentioned that Birch Lake brats are their most popular flavor.

Birch Lake brats are well-seasoned with caramelized onions, garlic, a little kick from red pepper, and bits of creamy mozzarella. I decided to give them an Italian-American spin with a bruschetta topping, blueberry balsamic glaze, and mozzarella stars.

If you are having a lot of people over, you may want to pick up a few different flavors. Babbitt Zup’s fully cooked brat flavors include: Salsa, Apple, Bloody Mary, Green Onion, Philly Cheese, Bacon Ranch, Jalapeño Cheddar, Nacho Cheese, Buffalo Bleu, Birch Lake, Wild Rice, Cranberry Wild Rice, Homestyle, Korean BBQ, Porketta, Bacon Cheeseburger, Cajun, Beer, and Hawaiian.

Ed Zupancich said his family’s favorite flavors are Buffalo Bleu and Green Onion. They also sell several smoked brat flavors that include: Mushroom & Swiss, Homestyle, Jalapeño Cheddar, Cheddar, Wild Rice, and Pepperjack. The Babbitt Zup’s really does have an impressive selection and you could have a lot of fun coming up with different toppings or simply enjoy the brats as they are. They also have a great deli section with pasta and potato salads, deviled eggs, baked beans, and coleslaw.

Another popular item that you won’t want to miss are “Birch Lake Speed Boats.” These jalapeño popper inspired appetizers are topped with Zup’s famous Italian sausage.

For an easy dessert, I spotted Kemp’s Red, White and Blueberry Ice Cream in the freezer section and jazzed it up with pie crust bowls, fresh berries, and colorful sprinkles.
